This is the soup recipe I've been making for years, handed down from Monique.
It makes about a gallon of soup, and takes about an hour. Enjoy!
Ingredients:
- 2-3 med (2 lg) sweet potatoes (or jewel yams) the sweetest you can find
- 1 large sweet onion
- 1 big can (28 oz) stewed tomatoes (whole & chunky) fresh ok too
- 2 cans chick peas (10-12 oz each)
- green onions
- 3-4 stalks celery
- 2-3 carrots
- garlic
- olive oil
- salt
- lots of pepper
- lots of parsley
Preparation:
- slowly sautee the potatoes first (carmelize) in olive oil or butter
- add lots of salt and pepper
- turn heat up to brown once potatos have softened
- add onions and garlic
- add 1-2 cups water and simmer 10 min
- add 1 can stewed tomatos and bring to a low boil
- add salt and pepper
- add chick peas, celery, carrots, green onions
- add little water (stir!)
- add chopped parsley last, right before serving
- serve with rye bread and butter
